Does Output have the ability to turn message history off or have it disabled by default while in use?

Yes. You can turn-off message history. In Server Manager > Configuration > Un-check "Chat History Log Storage", so that chat logs will not be stored in server.

In client side the stored logs can be cleared using View Log > Clear History.
